It's that time of year again. Time to share your recipes (and stuff yourself on other people's holiday favorites.)

Wren's Ranger Cookies

1/2 cup butter
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 egg
1 teaspoon vanilla
1-1/4 cups all-purpose flour
2 cups crisp rice cereal or 1 cup rolled oats
1 3-1/2-ounce can (1-1/3 cups) flaked coconut
1 cup snipped pitted whole dates or raisins

In a medium mixing bowl beat butter with an electric mixer for 30 seconds.

Add granulated sugar, brown sugar, baking powder, and baking soda; beat until combined

Beat in the egg and vanilla.

Beat in as much of the flour as you can with the mixer.

Using a wooden spoon, stir in any remaining flour.

Stir in cereal or oats, coconut, and dates or raisins.

Drop dough by rounded teaspoons 2 inches apart onto an ungreased cookie sheet.

Bake in a 375 degree F oven about 8 minutes or until edges are golden brown.

Cool on cookie sheet for 1 minute.

Transfer to a wire rack; cool.

Makes about 54 cookies.


Gramma's No Bake Cookies

1/2 cup milk
1/4 cup cocoa
2 cup sugar
1/2 cup margarine

Mix the above and cook on low heat for 1 minute. Then add:

1/3 cup peanut butter
3 cup rolled oats
1 tsp. vanilla

Mix well.

Drop by spoon on wax paper and let cool.

Keep in fridge.


Aunt Lucile's Carrot Cake

Cake
2 cups sugar
4 eggs
2 cups flour
1-1/2 cups Wesson oil
3 small jars baby food carrots
1 can crushed golden pineapple, drained
1 cup golden raisins
1 cup walnuts
1 tsp. salt
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. vanilla

Cream together sugar, eggs, flour and oil.

Add other ingredients and mix well.

Bake in greased, 9 x 13 pan at 350 degrees for 60 minutes.

Frosting
1 large pkg. Philadelphia cream cheese
1 tsp. vanilla
1 pkg. powdered sugar
2 T. butter

Cream all ingredients together and spread on cooled cake.


Coconut Melting Moments

1-1/2 sticks unsalted butter, at room temperature
1/2 cup powdered sugar (plus extra for decoration)
1 cup all-purpose flour
1/4 cup cornstarch
1/4 teaspoon salt
1 cup sweetened, shredded coconut

Heat oven to 325° F.

In a large bowl with an electric mixer, beat butter and sugar until pale and fluffy.

With mixer on low speed, beat in remaining ingredients until smooth.

Wrap in plastic wrap and chill 15 to 20 minutes, just until dough is firm enough to handle.

Divide dough into 4 pieces.  Roll each piece into a 1/2-inch thick rope (about 18 inches long).

Cut each into 1-inch pieces.  Roll each piece into a ball and put them on ungreased cookie sheets about 1 inch apart.

Bake 12 to 15 minutes until cookies are firm to the touch and light brown around edges.

Slide cookies onto countertop to cool.  Dust cookies heavily with powdered sugar.

Makes about 72.


Easiest Rice Crispy Treats Ever

1/2 cup karos suryp
1/2 cup sugar
1/2 cup peanut butter, creamy
3-6 cups rice crispies
1/4 cup semi-sweet chocolate morsels
1/4 cup toffee morsels (or just more chocolate)

Heat karos and mix in sugar.

When all mixed up, add the peanut butter. It should be really creamy.

Mix in the rice crispies. Stir until coated.

Place in dish. In the meantime, melt chocolate in the microwave in 15-20 second incriments.

Stir often. Once melted, spread over crispie mixture.

Let cool, cut into bar shaped pieces. (or just eat from the pan, as I do!) Serves many.


Abby's Oreo Balls

1 pkg. Double Stuff Oreos
8 oz. pkg. Cream Cheese
1 bar of Chocolate Almond Bark

Crunch oreos. Mix in cream cheese.

Roll oreos & cream cheese mixture into little balls.

Melt chocolate in microwave for 2 minutes.

Dip oreo & cream cheese mixture into melted chocolate.

Set on wax paper to dry.


Lula's Homemade Raspado (Snow Cone)

1 can of your favorite drink, soda, juice, etc.
1 cup
1 or 2 toothpicks
some foil

First take the can of drink and put it in the cup.

Then put the toothpick into drink.

Then put the foil on top so the toothpick shows and cover the half bottom.

After put in refrigerator for about a day or 5 hours.

Enjoy


Davene's Chocolate Mint Cookies

2 2/3 cups all-purpose flour
1/2tsp. baking soda
1/4 tsp. salt
1/2 cup unsweetened cocoa powder
1/4 cup light brown sugar, packed
2/3 cup white sugar
1 cup salted butter, softened
3 large eggs
1 tsp. pure mint extract
1 3/4 cups (10 oz.) mint chocolate chips
Preheat oven to 300 degrees F.

In a medium bowl combine flour, soda, salt, and cocoa powder. Mix well with a wire whisk and set aside.

In a large bowl blend sugars with an electric mixer at medium speed. Add butter and beat to form a grainy paste. Scrape sides of bowl, then add eggs and mint extract. Beat at medium speed until light and fluffy.

Add the flour mixture and chocolate chips, and blend at low speed just until combined. Do not over mix.

Drop dough by rounded tablespoons onto ungreased cookie sheets, 1 1/2 inches apart.

Bake for 19-21 minutes. Immediately transfer cookies with a spatula to a cool, flat surface.

Yields 3 dozen.


Ann's Hungarian Pastry Mincemeat Pies

12ozs plain flour
8ozs. butter
2 egg yolks
2 tablespoons cream
4 teaspoons rum

Rub butter into flour. add egg yolks, rum and cream to form a stiff paste. leave pastry to rest for 15 minutes

Roll pastry out to about 1/8" thick. cut with fluted pastry cutter (equal number of tops and bottoms)

Line pattie tins

Place 1 or 2 teaspoons of mincemeat in each pastry case (or fill nearly to top depending on size of tin) damp pastry edges

Place on lids and brush with beaten egg white and castor sugar

Bake 375f or reg. 5 for 15 mins.

This pastry can only be used for mince pies

can be frozen..and warmed through and they are very nice with clotted or fresh cream.


Sheri's Turtle Bars

Crust
2 cups of flour
1 cup light brown sugar 1/2 cup butter
1 1/2 cup pecan halves
 
Topping
1/2 cup brown sugar
2/3 cup butter
1 bag chocolate chips

heat oven at 350 degrees

Crust
Mix flour sugar and butter together. Press into a 13 X 9 ungreesed pan.

Sprinkle pecan halfes over mixture.

Topping
Cook sugar and butter stirring constantly until boils-boil 1 minute.

Pour over crust. Bake 20-25 minutes. Remove  from oven.

Sprinkle chococlate chips over the top.  Let the chips melt and spread with spatula.

Makes 3 dozen


White Trash

2 cups Chex Cereal
2 cups Cheerios toasted oat cereal
2 cups salted peanuts
2 cups small salted pretzels
2 cups M&M's
3 bags white chocolate chips

Mix the dry ingredients together.

Melt white chocolate chips and pour chocolate over dry ingredients while tossing to evenly distribute

Let cool and harden in refrigerator for at least 2 hours.


Tina's Butter Toffee

1 cup of sugar
1 cup of butter
1/4 cup of water
3/4 cup chocolate chips
1/2 cup chopped pecans

Mix together sugar, butter and water in a heavy sauce pot over medium high heat until mixture comes to a boil.

Once mixture comes to a boil continue boiling over medium high heat stirring constantly for about 15 minutes or until it reaches 300 degrees on a candy thermometer.

You will need to keep stirring constantly. The mixture will become a little hard to stir towards the end and will become solid.

Once this happens it still gradually start to turn the color of toffee and become a little thinner. Once this happens pour onto a cookie sheet and move it around so you have a flat layer.

You can either spread it out with a knife or just hold the sheet at an angle until you get the shape and thickness you like.


Carol's Double Chocolate Cookies

1 box devil's food cake mix
2 eggs
1/2 cup oil
chocolate chips (as much as you want)

Mix cake, 2 eggs and 1/2 cup oil. Add chocolate chips

Place spoonfuls on a baking sheet and bake for 10 minutes at 350 degrees

Try something new, use a different type of cake mix and different additions; such as nuts, caramel chips, cocnut, etc.


Nancy's Better Than Sex Cake

1 package German Chocolate Cake Mix
1 (14 oz.) can sweetened condensed milk
2 cups hot fudge topping
1 (12 oz.) container frozen whipped topping, thawed
4 chocolate toffee bars (Skor or Heath)

Bake german chocolate cake mix according to package directions.

While cake is still warm poke holes in top of cake with the end of a wooden spoon, pour sweetened condensed milk over top. Let cake cool.

Pour hot fudge topping over top of cake andcake and let set. Spread on whipped topping and garnish with crushed toffee bar crumb.

Better Than Sex Cake II

1 package chocolate cake mix (whatever you desire)
1 -14 oz. can sweetened condensed milk
1 - 14 oz. bottle caramel (or toffee) ice cream topping
1 12 oz. container frozen whipped topping, thawed
any type dry ice cream topping (for garnish - optional)

Bake cake mix according to package directions.

Immediately upon removing from oven, with the round end of a wooden spoon, evenly poke holes across the top of the cake. Try not to go all the way down to the bottom of the cake pan.

After you finish poking the holes into the cake, evenly pour the sweetened condensed milk into the holes.

Once the milk is poured into the holes, repeat with the caramel topping.

Let cake completely cool. Once cooled, spread whipped topping across the top of cake, and garnish with the dry ice cream topping you've chosen.


Kristen's Chicken Pot Pie

1. In a glass pyrex pan, spray non-stick cooking spray

2. add 2 cans of cream of chicken soup and 1 can of cream of mushroom soup

3. 1 large and 1 small can of canned chicken

4. 1/2 can to 3/4 can of milk ) depending on the thickness of mixture

5. veggies - corn, mixed veggies, beans (Combo them, whatever you prefer)

6.mix it all up- cook at 375 for 1/2 hour Make sure it is warmed all through

7. remove from oven, and add crescent rolls (laid front) on top and return to oven follow directions on the package.
