Ring's Snowballs
1 (8oz) pkg of cream cheese, softened
3/4 cup butter
1 cup powdered sugar
2 1/4 cups flour
1/2 teaspoon baking soda
1/4 teaspoon vanilla
1/2 cup chopped pecans
Beat cream cheese, butter, sugar and vanilla in a large bowl at medium speed until well blended. Add flour, baking soda and nuts; mix well
Chill the dough for about 30 minutes. Preheat oven to 350 degrees.
Take 1/4 of the dough out of the refrigerator and form little balls. Work quickly as balls quickly become sticky in hot hands. Place balls on ungreased cookie sheet. Repeat with remaining dough.
Bake cookies until light golden brown. About 14-16 minutes
When balls are cool, roll in powdered sugar.
Eat snowballs.
